These are so simple and yummy!
Preheat oven to 400
Makes 12
2 cups flour
1 tbsp baking powder
1/8 tsp salt
1/2 cup heaping packed brown sugar
1 1/2 cup fresh blueberries
2 eggs
1 cup milk
6 tbsp oil
1 grated lemon rind
Stir the dry ingredients together. In a separate bowl mix the wet ingredients plus the lemon rind. Mix the wet ingredients in the dry until just mixed (do not over mix). Then fold in the blueberries. Pour into 12 greased muffin cups. Bake for 15-20 min.
If you would like to add a crumble topping:
1/4 flour
1/4 brown sugar
1/4 tsp cinnamon
2 tbsp firm butter
Mix until crumbly. Sprinkle on top of muffins before baking.
